What is the purpose of the plastic coating, to keep from beating up the bait?

Why not buy hot roll and have it hot dipped? That or stainless. You should be able to buy expanded or perforated sheet locally.

Contact "midwest wire" in chicago. I would go with stainless steel wire. The coated stuff still rusts.

Using coated wire cuts down on the amount of electrolysis generated on the wire itself. Bugs are very sensitive to touch, and excess electrolysis generated from bare wire can actually deture bugs from the bait in a bare metal bait cage or trap!

Can't say about expanded but I can tell you that perforated stainless sheet is quite costly.
