A Great brine for, delicious tasting smoked tuna...33% brown sugar,33%saki,33% soy ...soak fillets 4 hours', pat dry, refrigerate 4 hours, then smoke. Yum...I take no credit, from my buddy Joe.

i use A Traeger, premium... pellets......smoke time,,depends on temp and fillet size...you dont want to overcook them...
